    Set the camera in manual mode...set shutter at 2/1000 as previously suggested...set AV to 5.6 or 8.0...set ISO to auto...meter with "spot" (which should take care of variable bird color.) Lastly set AF to AI servo. I have good luck with this recipe, and generally get a blue sky and an accurate bird. --.
