However Sgr A* is a fairly dormant black hole and may not be illuminated so well, and there is more scattering material between us and it than in M87. A bigger problem may be variability timescales $^{\dagger}$. The black hole in M87 is light days across, so images can be combined across several days of observing.

Researchers with the Event Horizon Telescope(EHT) project still hope to capture a suitable image of Sagittarius A*, but they’re not quite there yet. So, the EHT team did the next best thing. M87, the supermassive black hole at the center of galaxy Messier-87, proved to be the perfect first candidate for observation due to its enormous size and consistency. Must See : How exactly …

The Event Horizons Telescope of the European Southern Observatory took inages of both Sagittarius A* and M87 galaxy's black hole. But only the M87 black hole image was released due to the fact that Sagittarius A* is surrounded by thick clouds of dust so image was obscured. However, M87 galaxy's black hole has much much less dust around it.

That said, I'm not wholly surprised that we ended up seeing M87, rather than Sgr A*, for a couple reasons which the team mentions in their first paper: As Glorfindel said, Sgr A*'s event horizon is much smaller, meaning matter orbiting the black hole has a shorter orbital period. This contributes to variability on the timescale of minutes.
